About the totem of undying
A totem is a life. Held in either hand, it cancels the death that would otherwise have happened and hands back a sliver of health, which in a fight is the difference between losing your inventory and walking away. Nobody carries one — people carry stacks — so totems trade in bulk and get priced per item rather than per listing.
Where totems come from
Evokers drop them, and evokers appear in two places: woodland mansions, and the later waves of a raid. Mansions are one-and-done, so essentially every totem in circulation came out of a raid. That matters for the price, because raids are repeatable and can be farmed, which puts a ceiling on how expensive totems get.

Totem supply is a handful of players with working farms rather than the whole server. When one of them dumps a double chest onto the Auction House the price drops hard for a day; when farms go quiet it climbs back. This is the item where checking before you buy saves the most.
How much PvP is happening
Totems are consumed, not collected. Every fight that goes badly burns one, so demand tracks how much fighting is going on rather than how many players are online.
